At the core of our kitchen is Australia’s first Fazzone oven, crafted in Naples, Italy, and known for its ability to create pizzas with the perfect balance of a crispy crust and tender interior.


Matteo, alongside two of Sydney’s finest chefs, Federico Zanellato and Karl Firla, has designed a menu that celebrates quality, tradition, and creativity.

Matteo Ernandes is the driving force behind the dough at Regina. A highly skilled pizzaiolo with a deep respect for Italian tradition, Matteo combines classic technique with modern fermentation methods to create pizzas that are light, structured, and full of character. From managing high-hydration doughs to executing precise bakes across contemporary, padellino, and fritta styles, his craft is all about balance, texture, and consistency.

Calm, focused, and relentlessly detail-oriented, Matteo brings both discipline and soul to the kitchen — the kind of pizzaiolo who knows that great pizza starts long before it reaches the oven.

As a co-founder and driving force behind venues such as  LuMi dining  and Regina La Pizzeria, Michela has built a reputation for creating spaces that are as conceptually strong as they are commercially sound.

With over 15 years of experience as a sommelier, Michela’s foundation in hospitality is deeply rooted in wine, flavour pairing, and guest experience.

This background shapes her approach across every venu.
From building thoughtful beverage programs to understanding balance, seasonality, and how people truly connect around the table.

On the floor, Michela and her team ensures every guest feels at home, combining fun, approachable service with professionalism.
